Sometimes Mother Nature is just a bit too generous, combine that with the bounty of Bute Produce and you get a great big marrow to challenge your cooking skills. The wondrous vegetable weighing in at 3.6 kg sat for a day on the work top. After a bit of research, which was needed, thunderous rain provided the motivation to get on with the task.
I decided to use only ingredients in the cupboard and delivered in my value Green Box which cost £10 delivered.
The Starter – Cream of Potato and Marrow Soup
- 3 spring onions, sliced
- 2 garlic cloves, crushed
- 2 potatoes, cubed
- 400 g of marrow, cubed
- salt, pepper, sage
- 200ml of milk
- splash of vegetable oil
- 1 ltr of vegetable stock
With everything prepared it was time to chuck it in the pan. Vegetable oil first on a medium heat, followed by spring onions and garlic, then sage, stirred until onions were shiny. Added potatoes and marrow, swirled it around, covered and left on a low heat for about 10 minutes. Last was to add the vegetable stock then stir in the milk and add salt and pepper. The pan simmered away for about 30 minutes. Finally blitzed it was liquidizer to make it smooth.
Really nice, especially the taste of sage. The soup lasted two days with three of us. Starter on Saturday, and then added a half pint of chicken stock to thin it down for Sunday lunch. Yummy.
