The end of the great big marrow challenge was in sight. The final recipe was for a spiced loaf. I was confident this would see the big fellow off. Husband and daughter were skeptical about pudding that involved vegetables but thought better of making too much comment. This was the most expensive dish from the three, mainly due to the sugar. I didn’t have caster sugar in the cupboard so used soft brown instead.

Ingredients
- 3 eggs, beaten
- 400g soft brown sugar
- 250ml vegetable oil
- 2 teaspoons vanilla extract
- 375g plain flour
- 3 teaspoons ground cinnamon
- 2 teaspoons ground nutmeg
- 225g grated marrow
Have to say it was worth the effort. The loaf made a lovely finish to our tea on Saturday, got shared with our neighbours, and was polished off at a picnic at Port Bannatyne park.
I did groan at the last, there would still be about a big chunk of marrow left despite my best efforts.
